Woodinville – Straight Rye Whiskey

Woodinville Straight Rye is made from 100% rye, grown for the distillery on the Omlin family farm in Quincy, Washington. The grain is mashed, distilled and put into barrel at the Woodinville distillery, then taken over the Cascade Mountains to private barrel houses in Central Washington, where extreme temperature swings help draw flavour from the oak. The barrel wood is seasoned outdoors for eighteen months before coopering, then toasted and heavily charred. The nose shows cinnamon, clove and fruit leather. On the palate are caramel, wood spice and honey, with a long finish.
