Ximénez-Spínola Battonage 2018 (70cl)

Ximénez-Spínola Battonage is a Spanish brandy from a family-run house that specialises in Pedro Ximénez. This is the 2018 vintage. It takes its name from bâtonnage, the lees-stirring technique used for white wines. During eight months in casks previously used for Cosecha, the spirit is stirred in this way to gain more intense aromas and flavours. The aim was purity of fruit rather than the elegance that comes from long years in cask. The nose is very aromatic and fruity, recalling the wine it comes from. The palate is pleasant and extremely silky, with a long but delicate and subtle finish.
