Yellowstone Cask Strength Single Barrel Bourbon is a barrel-proof Kentucky straight bourbon from Limestone Branch Distillery in Lebanon, Kentucky, bottled without dilution in a 750ml bottle. The proof varies from barrel to barrel. The mashbill is 75% heirloom corn, 13% rye and 12% malted barley. The yeast is the original culture from the 1870s Yellowstone recipe, recovered by DNA analysis of a yeast jug that belonged to the Beam family ancestors. Tasting notes describe caramel, toasted oak, baking spice and dried fruit on the nose, brown sugar, roasted pecan, cinnamon and black pepper on a chewy palate, and a long, oak-driven finish.
