Yellowstone Rum Cask Finish Bourbon is a Kentucky straight bourbon from Limestone Branch Distillery in Lebanon, bottled at 50% in a 750ml bottle. It is aged for four years.
The mashbill is 75% open-pollinated white heirloom corn, 13% rye and 12% malted barley. After the four years it spends a further nine weeks in rum casks from Havana, Cuba, a short finish intended to add tropical molasses character while the grain stays in front.
Gingerbread, poached pear, brown sugar and vanilla come first on the nose, with cinnamon and fresh-cut hay. The palate has cinnamon, allspice, toasted marshmallow, crème brûlée and toffee. The finish is medium, with tobacco leaf, clove and cocoa-seasoned oak.
