Yellowstone Select is a Kentucky straight bourbon bottled at 46.5% ABV in a 75cl bottle. It is made at Limestone Branch Distillery in Lebanon, Kentucky, and blends 4-year-old and 7-year-old bourbons.
The mashbill is 75% open-pollinated white heirloom corn, 13% rye and 12% malted barley. Each grain is cooked separately in an open cook: the corn first at over 200 degrees, then the rye and the malted barley at lower temperatures.
The nose has rye toast, cinnamon, cherry and melted butter, with a little orange zest. The palate has smoked caramel, peanut, vanilla, honey and dried cherry. The finish is medium to long, with smoky oak and brown sugar.
