This is the second release in Yellowstone's Special Finishes Collection, a Kentucky straight bourbon bottled at 50% ABV in a 750ml bottle. It was made at Limestone Branch Distillery in Lebanon, Kentucky, and launched in March 2024.
The bourbon is four years old and was finished for nine weeks in Havana rum casks, which previously held rum distilled from molasses made from Cuban-grown sugarcane.
Gingerbread and poached pear lead the palate, with toasted marshmallow and crème brûlée through the middle. The long, honeyed finish brings tobacco, clove and cocoa-seasoned oak.
