Yellowstone Toasted Bourbon is the first release in the Special Finishes Collection: a four year old Kentucky straight bourbon from Limestone Branch Distillery, bottled at 100 proof (50% ABV) in a 75cl bottle.
Master Distiller Stephen Beam chose five types of toasted stave for a secondary finish: High Toast, American Oak Double-Toast, High Vanilla, Rickhouse and Spicerack. The staves go into the barrel rather than the bourbon moving to a new one. The mash bill is 75% corn, 13% rye and 12% malted barley.
The nose is toasted caramel and vanilla with fall spices and cinnamon. The medium-bodied palate offers walnut, toffee, black tea and white pepper, and the crisp finish brings cocoa, tobacco and oak.
