Abasolo El Whiskey de Mexico (75cl, 43%)

Abasolo El Whiskey de Mexico is a Mexican whisky bottled at 43% ABV in a 75cl bottle. It is made from 100% ancestral Cacahuazintle corn, a non-GMO heirloom grown at over 7,000 feet, and distilled at the Abasolo distillery in Jilotepec, State of Mexico. The corn is nixtamalised, cooked and soaked in limewater, then roasted and stone-milled. The mash is fermented for over 120 hours and double distilled in copper pot stills. Maturation is in new toasted oak and used oak casks, in an open warehouse with no walls. The nose is roasted corn and honey. On the palate roasted corn leads, followed by honey, vanilla and black tea over a leathery depth. The finish is warm and grain-led.
