Abasolo El Whisky de Mexico (75cl, 43%)

Abasolo El Whisky de Mexico is a Mexican corn whisky from Destilería y Bodega Abasolo in Jilotepec, State of Mexico, bottled at 43% in a 750ml bottle. It is made entirely from Cacahuazintle corn, an heirloom variety native to Mexico. The corn is nixtamalized, meaning soaked and cooked in an alkaline solution, before fermentation and distillation, a technique the distillery presents as a first for whisky. The spirit is aged in new toasted oak and used oak barrels. The nose is roasted corn with honey, vanilla and a little leather. The palate is velvety, with vanilla, honey, black tea and baked apple, and the finish is medium to long, with vanilla and peppery spice.
