Amarone della Valpolicella DOCG from Ripa della Volta is a red wine made with an appassimento process, drying grapes for several months on racks to concentrate sugars and aromas. It shows a deep garnet colour. The nose offers ripe cherry and plum, with spice, tobacco and dark chocolate. On the palate it is robust and velvety, with balanced acidity and tannin. The finish is long and persistent, with a pleasantly bitter aftertaste typical of Amarone. It suits red meat, game, aged cheese or meditation, and may benefit from further bottle ageing.
