Opimus is a 15 year old Kentucky straight bourbon from Ampersand, finished in casks that previously held Tokaji, the Hungarian dessert wine. It is bottled at 58.5% in an angular, decanter-style bottle.
The finish in Tokaji casks sets it apart, adding apricot, fig and golden raisin to a bourbon with a rich oak character, honeyed fruit, caramel and toasted spice.
On the nose there is baked pear, orange blossom, vanilla bean and toasted almond. The palate brings honey, dried apricot, butterscotch, fig and warm spice, leading to a long, velvety finish with Tokaji sweetness and a little bourbon heat.
