Bellarine – 'Aquila audax' Single Malt Whisky (70cl, 50%)

Bellarine 'Aquila audax' is a non-peated single malt from Bellarine Distillery, bottled at 50% in a 70cl bottle. The outturn is 472 bottles. The name is the Latin name of the wedge-tailed eagle, which the distillery uses as a symbol of bold richness. It was matured in one 250 litre and one 128 litre first-fill Oloroso sherry barrel, then finished in two refill American oak bourbon barrels. The nose offers black forest cake, candied oranges dipped in dark chocolate, caramels, aged balsamic and old leather. The palate brings Florentine biscuits, browned butter, dark caramel fudge and dried fruits, and the finish is long and velvety, with date and walnut cookies.
