Bellarine Peregrine Falcon Single Malt Whisky (70cl, 50%)

Peregrine Falcon is a non-peated Australian single malt from Bellarine Distillery, part of its Rare Series and bottled at 50% ABV in a 70cl bottle. Only 288 bottles were produced. It matured for 4.5 years in a single 200 litre American oak cask that had held Shiraz from Peregrine Ridge Winery in Heathcote, Victoria, and was finished in a refill American oak bourbon cask. The Shiraz cask adds dark fruit, while the bourbon cask balances and lifts it. The nose offers glacé cherries, toasted coconut, hot jam doughnuts and crème de cassis. On the palate are spiced blueberry compote, sweet vanilla yoghurt and shortcrust pastry with beurre noisette and Jersey caramel. The finish is long, rich and buttery.
