Bimber – Single Malt Ex-Bourbon Oak Batch No. 1 (51.8%)

This is Batch No. 1 of the ex-bourbon single malt from Bimber, a London distillery whose first release came in 2019. It matured in used American oak casks that previously held bourbon, and was bottled in May 2020 at 51.8%, in an outturn of 1948 bottles. The oak adds sweet vanilla and caramel to Bimber's fruity character. The nose offers green apple, dried stone fruit, vanilla wafers, coconut and buttered toast. On the palate come baked apricots, pepper, charred oak and creamy vanilla, and the finish is sweet and spicy.
