Bimber – Single Malt Whisky Re-Charred Oak Batch No. 1 (51.9%)

This is a single malt from Bimber, a London distillery whose first release came in 2019. Re-Charred Oak Batch No. 1 was the distillery's first larger batch release, bottled in September 2019 at 51.9%, and 5000 bottles were filled. It matured in American oak casks re-charred to level 4 by Bimber's own coopers. This heavy char, also called crocodile char, leaves a layer of active charcoal that adds sweet notes of fruit and caramel. The nose has roasted pineapple, honey, nougat and cake batter, with burnt oak, cinnamon and pepper. On the palate come red apples, ripe pears, banana, cream caramel, vanilla, pepper and ginger. The finish is of charred oak, fruit and balanced dryness.
