Blinking Owl Aquavit (75cl, 42.5%)

Blinking Owl Aquavit is an unaged aquavit from a craft distillery in Santa Ana, California. It is built on organic wheat and malted barley, macerated with ten organic botanicals and finished with a last steep of caraway, which gives it a natural golden hue. Fresh dill, caraway and hibiscus, the city flower of Santa Ana, sit alongside undertones of fennel and cardamom. Bottled at 42.5% abv, it can be served chilled and neat or used in a Bloody Mary or a Scandinavian-style cocktail. The nose is green and spiced, with caraway, anise and a floral hibiscus tang. On the palate, dill and caraway lead, with fennel and cardamom underneath, and the finish is warm and long.
