Bonnington Single Malt Oloroso Sherry Cask (70cl, 47%)

This is a single malt from Bonnington Distillery in Leith, matured entirely in Oloroso sherry casks. It is bottled at 47%, non-chill-filtered and without added colour, in a 70cl bottle. The distillery was completed in 2019 and began production in March 2020, making it the first single malt distillery in the Leith docklands area in almost a century. The casks bring sherry sweetness and caramel together with nuts, spicy oak and drying tannins. The nose has raisins, figs, dates, walnuts, almonds, dark honey, orange peel and cocoa, with oak and leather behind. On the palate come stewed plum, raisin bread and dark chocolate, with cinnamon, clove and ginger. The finish is long, with sherry, cocoa, nuts, espresso and bittersweet orange peel.
