This is a Kentucky straight rye whiskey from Chicken Cock, finished in Caribbean rum casks. It was inspired by a trip to the Caribbean, and 25 barrels of the brand's Signature rye were chosen for the finish, which lasted at least six months after more than four years of maturation.
The mash is 95% rye and 5% malted barley. The whiskey is non-chill filtered and bottled at 47.5% ABV in a 75cl replica of a Prohibition-era apothecary-style bottle.
The nose offers spices, pepper and sweet molasses with a hint of rye grassiness. The palate is spicy, with vanilla, butterscotch, pepper and a little rum sweetness. The finish is very long and rye-led, with molasses and a buttery texture.
