Distiller's Council is a Kentucky straight bourbon from the Colonel E.H. Taylor, Jr. range, bottled at 50% ABV in a 75cl bottle.
It marks a gathering in 1996 of bourbon pioneers and retired George T. Stagg Distillery craftsmen at Buffalo Trace. Looking to E.H. Taylor's methods, they revived his original sour mash process, and the bourbon is made in near-1880s fashion.
The nose is grain-forward, with biscuit and pastry. On the palate there is toasted sugar, dark caramel, creme brulee, plum dessert and nougat.
