A distinctive American desert spirit made from wild-harvested Dasylirion, or desert spoon, in West Texas. The plants are cooked, fermented and distilled into a clear spirit, then a portion is matured in charred virgin American white oak barrels for roughly two years. This gives the naturally herbaceous sotol added depth, structure and whiskey-like richness, while retaining its desert-herb identity. It is bottled at 50% ABV and suited to neat pours or whiskey-style cocktails.
Tasting Notes
Vanilla bean, cedar, caramel and dry desert herbs, with subtle hints of eucalyptus and toasted oak.
Smooth and layered with vanilla, dried cherries, oak spice and soft caramel, balanced by sotol's natural herbal brightness.
Creamy and lingering, reminiscent of vanilla custard with faint eucalyptus and gentle oak warmth.
