Donaji Barro is a Mexican mezcal made from hand-selected agave. The agave is cooked in a stone-lined underground oven, which brings smoke and earthy, woody character to the spirit.
It is then distilled in small batches in copper stills. The mezcal is clear and bright in the glass.
On the nose there is cooked agave, light smoke, herbs and minerals. The palate starts soft and velvety before turning earthy and peppery, with a gentle natural agave sweetness. The finish is long.
