Donaji Ensamble Mezcal (70cl)

Donaji Ensamble is a mezcal from Oaxaca, made from a blend of several agave varieties. The agave is cooked slowly in stone-lined pits fired with encino wood, which gives the smoky character, then milled and fermented in open wooden vats with natural yeasts. Distillation is in copper stills. The nose combines damp earth, chocolate, spice and a base of tropical fruit alongside the smoke. The palate is robust yet harmonious and soft, with complex flavours and a long, pleasantly peppery finish. It is suited to sipping at room temperature, and also to cocktails.
