Fabiano Prosecco DOC Sestiere Castello 4357 (20cl)

This is a Prosecco DOC from Fabiano, a Veneto house. It is named after the house number of the first Fabiano wine shop and dedicated to the founder. The grapes are picked relatively early to keep acidity and freshness, then lightly pressed and cold-soaked before a first fermentation creates the base wine. A second fermentation in pressurised tank gives the bubbles. It comes in a 20cl bottle. Pale yellow with greenish reflections, it shows yellow fruit, fresh apples, pears and a hint of blossom. The palate is fresh, lively and velvety, with a lasting, well-balanced finish.
