Fidora Valpolicella Ripasso 2020

A red wine from the Valpolicella area, made from Corvina, Corvinone and Rondinella grown on a single slope in the Illasi valley east of Verona. The Monte Tabor vineyard has been farmed organically since 1992, with vines trained in pergola at 220-500 metres on limestone deposits. The grapes are destemmed, gently crushed and cold-macerated before fermentation in steel tanks. The wine is held until January-February, then blended with the Amarone pomace and refermented for 15-20 days before ageing 6-12 months in French oak barrels of various sizes. The Ripasso process gives more structure and aroma than an ordinary Valpolicella. The colour is brilliant with deep ruby tones; the nose shows dark berries, cherry, plum, wild blackberry, vanilla and spice. The palate is fleshy and structured, with fruit, tannin and alcohol in balance, and a long, harmonious, slightly spicy finish with mature and exotic notes reminiscent of Amarone.
