Fielden Cask 292 is The Heart Cut #16, a 100% English rye whisky in a 50cl bottle. Three quarters of the grain is heritage landrace rye grown in Oxfordshire, and the remaining quarter is floor-malted rye from Warminster Maltings.
The whisky was finished for two years and four months in a 600-litre Solera Oloroso sherry cask that had been seasoned for 45 years in Sanlúcar de Barrameda.
The nose brings salted caramel, cinnamon waffles, tropical fruit and crushed nuts, with earthy spice. The palate has spiced honey, rye spice, toasted cereal and a savoury salinity, and the finish is long and nutty, with dark chocolate, candied ginger and a coastal saline note.
