François Carillon Bourgogne Côte d'Or 2023

A white Burgundy from François Carillon, made from Chardonnay grown on parcels in Puligny. The vines are 50, 54 and 60 years old, and the wine is fermented and matured for 12 months in classic small oak barrels, both new and two to three years old, before light filtration and bottling in December after harvest. It has a bright, lightly golden colour, with mineral notes, citrus fruit and lightly smoky tones on the nose. The palate is full and structured, with richness and mineral character, and it grows well in the glass. It is suited to steamed fish, fish or shellfish soups, oysters and scallops.
