Glen Spey 10 Year Old 2015 Pedro Ximénez Octave Finish – Duncan Taylor The Octave (53.9%)

This is a Speyside single malt from Glen Spey, bottled by Duncan Taylor in its Octave series at 53.9%. The spirit was distilled on 4 November 2015 and matured for ten years before a finish in a small Pedro Ximénez octave cask. The small cask means more contact between wood and spirit, and the Pedro Ximénez adds its sweetness and dark fruit. The nose offers ripe apple, juicy pear, a touch of citrus, sweet caramel and a malty base. The palate is full, with dark syrup, toffee, raisins, bitter chocolate and clear oak. The finish is long, with dark fruit, oak and a hint of chocolate.
