Glenallachie 11 Year Old is a Speyside single malt from The Wood Collection, matured in puncheons and hogsheads that previously held Palo Cortado sherry. It is bottled at 48% ABV in a 70cl bottle, with natural colour and without chill-filtration.
Palo Cortado combines the aromatic finesse of Amontillado with the richness of Oloroso, and the casks bring ripe plums, dark mocha and warming cinnamon spice.
The nose offers cinnamon spice, butterscotch and damson plum, with heather honey, raisin butter and crystallised ginger. On the palate come toasted honeycomb, fresh brambles and baking spices, then maraschino cherries, mocha, plum jam, treacle and chocolate.
