The Drover is a single malt from GlenWyvis and the first release in its Highland Legacy Series, which honours traditional trades of the Highlands. It recalls the cattle drovers of Dingwall, with a label by local artist Fiona Mackenzie. The release runs to 3,000 bottles.
It matured in 37% first-fill Sauternes barriques, 30% first-fill Madeira hogsheads, 21% high-strength first-fill bourbon barrels and 12% first-fill Oloroso hogsheads. It is bottled at 46.5%, non-chill-filtered and without added colour.
Tasting notes mention leather, milk chocolate, walnut and poached pear on the nose, walnut, pepper and orange zest on the palate, and a long, nutty finish of cocoa and dark chocolate.
