Hakushu – 12 Year Old

Hakushu 12 Year Old is a Japanese single malt from the Suntory distillery in the forests at the foot of the Southern Japan Alps. It is made from malted barley only, mashed with soft water filtered through granite, and aged for a minimum of twelve years. Fermentation takes place in wooden washbacks, and the wash is distilled twice in copper pot stills. The whisky is brought down to strength with Japanese spring water. The nose is herbal, with hints of apple, pear and almond. The palate has pear, butter cookies and dark plums over a subtle smoky undertone, and the finish is soft, dry and lingering.
