Highland 19 Year Old 2007 Refill Hogshead (Thompson Bros.) (57.1%)

This is a 19 year old single malt from an unnamed Highland distillery, selected by Phil and Simon Thompson of Thompson Bros. in Dornoch. It was distilled on 21 June 2007, matured in a refill hogshead and bottled in July 2026 at 57.1%, without chill-filtration or added colour. The whisky leans towards peat smoke, salty sea air and savoury herbal notes, with a fruitier side of ripe apples and citrus. On the nose there is peaty malt, sage, maritime notes of shellfish and salty air, and roasted hazelnuts.
