Highland Single Malt Whisky 19 – Thompson Bros. (70cl, 57.1%)

This is a 19-year-old Highland single malt from Thompson Bros., the brothers who work in Dornoch. It was distilled on 21 June 2007, matured in refill hogsheads and bottled in July 2026 at a cask strength of 57.1% ABV. It is unfiltered and comes in a 70cl bottle. Peaty malt and sage lead the nose, with shellfish and toasted hazelnuts. On the palate, citrus and ripe apple sit alongside savoury ham and salty capers. The finish stays peaty, with a touch of peanut.
