Hillrock – Cabernet Finish Solera Aged Bourbon

This is a Solera aged bourbon from Hillrock, finished in Cabernet casks. The Solera method uses a stack of barrels from which a small portion is drawn off from time to time and replaced with new whiskey, so no barrel is ever fully emptied. Hillrock marries its small barrel-aged Estate Bourbon with mature seed bourbon. The average age of the Solera bourbon is currently over 6 years, and the rye content is approximately 37%.
