Hillrock – Double Cask Rye Sauternes Cask Finished

This is a rye whiskey from Hillrock, made with organically grown rye from the Hillrock Estate and created by Dave Pickerell. It is matured in two separate new charred American white oak barrels, then finished in French Premier Cru Sauternes wine casks. The finish adds a rounded balance and an almost buttery texture. The Sauternes casks bring dried fruit and citrus notes, with lemon and apricot to the fore.
