Hirsch The Bivouac is a Kentucky straight bourbon bottled at 100 proof (50% ABV). It combines two straight bourbons distilled in Bardstown, Kentucky.
Ninety-five per cent of the blend comes from a mashbill of 74% corn, 18% rye and 8% malted barley, aged for at least three years. The remaining five per cent uses a higher malted barley mash of 72% corn, 13% rye and 15% malted barley, aged for at least six years. Each batch is made up of around 160 barrels.
