Hirsch The Bivouac Kentucky Straight Bourbon Whiskey (75cl, 50%)

The Bivouac is a Kentucky straight bourbon from Hirsch, bottled at 50% ABV in a 75cl bottle. It is a blend of two bourbons, made with a custom mash bill based on the one behind the A.H. Hirsch 16 Year Old Reserve. Ninety-five per cent comes from a bourbon of 3 years and 9 months distilled by Bardstown Bourbon Company (74% corn, 18% rye, 8% barley). The other five per cent is an eight-year-old distilled by Willett (72% corn, 13% rye, 15% malted barley). The nose is tight at first, then opens to coffee cake, fruit cup, cherry, citrus and dried herbs. The palate is smooth and silky, with cooked plums, dark chocolate and cinnamon, and the finish brings oak, honey and chocolate.
