Holyrood Noir Burgundy Yeast is a single malt from the distillery's Noir trilogy, in which French wine yeast meets Scottish malt. The distillery used Pinnacle M and Maurivin yeasts and matured the spirit in bourbon barrels and Burgundy barriques.
It was bottled at 47.4% ABV, without added colour or chill filtration, in a 70cl bottle.
