Holyrood Noir Burgundy Yeast is a Lowland single malt, bottled in 2025 at 47.4% in a 70cl bottle. It is made with a special Burgundy wine yeast and matured in bourbon casks and Burgundy barriques. It is non-chill-filtered and has no added colour.
Notes of dark berries, cherries, chocolate and fine spice appear on the nose. The palate is full and layered, with red fruit, cocoa, malt and a gentle sweetness, and the finish is long.
