Hyde No. 7 is an Irish single malt, triple distilled in a traditional copper still. It matured for six years in Oloroso sherry hogsheads in County Cork, and it is bottled at 46% ABV without chill-filtration.
Hyde is named after Douglas Hyde, the first president of Ireland. It revives the Irish tradition of bonding, in which spirit from other distilleries is bought, matured separately and bottled independently, allowing small batches with a distinctive cask finish.
The nose shows a strong sherry character, dark chocolate and honey with a hint of citrus. The palate is creamy and full of almonds and hazelnuts, with honey sweetness and a little malt. The finish is medium, continuing the nutty theme with some sultanas at the end.
