A Franciacorta Extra Brut from Le Cantorie, with fine bubbles, elegant perlage and vibrant freshness that supports the sip without weighing it down. The nose shows delicate white flowers and bread crust, with a mineral note and hints of white-fleshed fruit that remain subtle. In the mouth the acidity is well balanced, the structure is dry and savoury, and the finish is dry and pleasantly persistent. Overall the wine shows balance and precision rather than breadth. It suits an aperitif with light marine preparations, raw fish and oysters, but also fish-based first courses and delicate second courses; it also surprises with fresh or not too salty blue cheeses.
