J.J. Corry Cliffs of Moher

J.J. Corry Cliffs of Moher is a single cask Irish whiskey finished in Spanish sherry casks that were left to mature in O'Brien's Tower, a lookout built about two hundred years ago on the edge of the Cliffs of Moher in County Clare. The whiskey spent five years in bourbon casks on the McGuane family farm before being paired with sherry casks made by a cooper in Montilla, Spain. In the tower, temperature, humidity and air pressure shape the finishing, with wind, cold fronts and sea spray reaching the casks. It is the first time whiskey has matured in O'Brien's Tower.
