Jacob's Pardon 16 Year Old is an American whiskey aged for 16 years and finished in sherry casks, in a 75cl bottle. It belongs to the Cask Collective Rare Finishes Series.
The sherry finish brings dried fruit, dark caramel, toasted nuts and baking spice to the aged whiskey.
The nose has dark raisins, fig preserves, toffee, vanilla bean and polished oak. The palate is rich and silky, with caramelised sugar, dried cherries, roasted almonds, cinnamon and dark cocoa. The finish is long and warming, with sweet sherry, oak spice and leather.
