Kanosuke – 'Hioki' Pot Still Japanese Whisky

The Hioki is a pot still Japanese whisky from Kanosuke, a distillery in Kagoshima Prefecture facing the East China Sea from Fukiagehama Beach. Komasa Jyozo, a respected Shochu distillery, founded Kanosuke in 2017, and it became operational in 2018. Its three Miyake copper pot stills have differing neck shapes and lyne arm angles, so the distillers can vary the character of their spirit in many ways. The prefecture's subtropical climate brings strong winter winds and big seasonal temperature changes, and sea spray from the nearby coast gives the maturing whisky minerality and salinity.
