Ki One Red Pepper Cask Korean Single Malt Whisky (70cl)

This is an experimental Korean single malt from The Ki One Distillery, in a 70cl bottle. It was made with chef and author Edward Lee, the Ki One Ambassador, and follows the distillery's aim of capturing the savoury, sweet and spicy flavours of gochujang. New American oak casks and ex-bourbon casks were seasoned with locally grown red chilli peppers and hot water. After several months they were emptied and filled with Ki One's new make single malt, which aged in them for over three years. The whisky is fruit-forward, with candied pepper and brown sugar, and a warming tingle on the palate like Sichuan peppercorn.
