Kilchoman – 11 Year Old Family Collection Sherry Cask (70cl, 54.7%)

This is an 11 year old Islay single malt from Kilchoman, part of the first Family Collection. It matured entirely in ex-Oloroso sherry butts and is bottled at 54.7% in a 70cl bottle, non-chill-filtered and without added colour. The malt was peated to 50 ppm and comes from Port Ellen Maltings. The casks were chosen during the distillery's annual review of maturing stock, with all five members of the founding family involved in the selection. The nose offers barbecue smoke, raisin syrup and walnut cake, followed by dark chocolate, orange peel and sea air. On the palate, dense peat smoke wraps around sticky dates and dark sugar syrup, with roasted coffee, salted nuts, clove and black pepper behind. The finish is long, smoky and spicy.
