Kilchoman – Cognac Cask Matured 2023 Edition (50%)

This is the first Kilchoman matured in ex-Cognac casks, from the 2023 edition and bottled at 50% ABV. The whisky was distilled in 2016 and then aged in 31 barriques that had held Cognac. Kilchoman is a farm distillery on Rockside Farm in north-west Islay, founded in 2005. It grows barley on the farm, and 20% of the malt comes from its own barley. It makes only single malt, with a peaty Islay character and often a little citrus. The used Cognac casks bring notes of pears, apricots and assorted dried spices.
