An artisanal mezcal from Koch El Mezcal, made from 100% wild Maguey Tobalá (Agave potatorum) by Maestro Mezcalero Pedro Hernández in San Baltazar Guelavila, Oaxaca. The agave grows on rocky mountain slopes and takes around 9-10 years to mature.
Production follows the artesanal tradition: agave piñas are slow-roasted in underground earthen ovens, crushed and fermented naturally in wooden vats, then double-distilled in copper stills. It is bottled unaged (joven) at approximately 47% ABV.
The nose is elegant with tropical fruit, coconut, hazelnut, fresh herbs and subtle ocean-air minerality, plus light wisps of smoke. The palate is complex and silky with pineapple, cocoa, herbal tones and gentle ash, balanced by floral sweetness and earthy agave character. The finish is long and refined with lingering walnut, chocolate and herbal bitterness, supported by delicate smoke.
