Kyoto Distillery Ki No Bi Dry Gin (45.7%)

Ki No Bi is a Japanese dry gin from the Kyoto Distillery, distilled, blended and bottled in Kyoto. The name translates as 'The Beauty of the Seasons'. It is made in a recognisable dry style with a distinctly Japanese accent. The base is a rice spirit, cut with water from the Fushimi sake-brewing district. The botanicals are Japanese: yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips, bamboo, gyokuro tea from the Uji region and green sanshō berries. On the palate it is bright with yuzu and pepper, alongside green tea. It is bottled at 45.7% ABV.
