Ki No Bi, which translates as 'The Beauty of the Seasons', is a dry gin distilled, blended and bottled in Kyoto. It is made in a recognisable dry style with a distinctly Japanese accent, and it was the first Japanese gin made in Kyoto. The botanicals are all Japanese: yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō berries, a Japanese peppercorn. The base is a rice spirit, reduced with soft water from the Fushimi sake-brewing district. It is bottled at 45.7% ABV.
