This is Lambay 20 Year Old Castle Prestige Edition, a triple-distilled Irish single malt bottled at 43%. It is a limited edition.
It was finished in ex-cognac French oak casks, which are slightly more porous than usual and allow more contact between the air and the whiskey. The casks mature on Lambay island, where the air carries sea salt and pollen.
The nose is warm vanilla, supple oak, ripe plums, green apples and iodine, with a faint hint of rancio. The palate brings saffron, ginger and pepper alongside almond, honey and walnut, with a salty edge. The finish is long, with fruity rancio balanced by salt and pepper.
